In an era of counterfeit and falsehood of ingredients and territorial misrepresentations many chefs and restaurant operators use the Italian sound and low-equivalent ingredients as a way to deliver a distorted representation of dishes codified in the Italian Historical Repertoire. The blending of ingredients and techniques completely diverse from the Veritable and the noble traditions is an insult for both the consumers and the Gastronomy of Italy.
